Rinker Rock recipe #2 - TABOULI
Mazz makes a spectacular tabouli, very green with parsley, as it should be, and here's the recipe:
- 1 c. bulghur
- 1 chopped tomato
- 1/2 minced onion
- 2 bunches parsley (4 cups loose)
- 3 tbl. Lemon juice
- 3 tbl. Olive oil
- 1-2 tsp.salt depending on taste
The bulghur is soaked for 3-4 hours in warm water. The parsley, tomato and onion are minced, either by hand or by processor. The lemon juice is fresh, the olive oil the best, the salt from the sea.
The end product should be very, very green, and the bulghur not very noticeable.
