Another Rinker Rock recipe - "Sunny Tom" Salad Dressing
My all time favorite salad dressing, from a Bellaire, TX restaurant.
This recipe makes a luscious, deeply red, glossy, tangy dressing for greens or pasta salad or even a BBQ sandwich.
- 1 c. sundried tomatoes (in oil or soaked dried)
- 3/4 c. brown sugar
- 1 c. balsamic vinegar
- 2 c. olive oil
Obviously, the better your sun-dried tomatoes, vinegar and oil, the better the dressing. We served this dressing on mixed greens, with feta cheese.
